Hello all,
After some research I can’t find a good MIDI interface solution for the Apple //c. If any of you find some please post links here. However, the components to make a homebrew solution with custom software exist, but there are challenges to make it work. The first one I found out when I cut the extension off a Soundblaster MIDI interface cable and found that the pinout was not what I expected.
Here is a page that shows how most pins are unused, despite the cable containing many wires:
